con el diagnostico efectuado a los estudiantes de un grupo de
Servicios Gastronomicos de un Instituto Politecnico con la
finalidad de determinar las insuficiencias en el aprendizaje en el

el vocabulario. Los terminos mal utilizados en esta especialidad
limitan el desarrollo de su modo de actuacion una vez egresado de

de profesores para atender la diversidad cultural existente en la
carrera, a partir de los presupuestos teoricos de la
transculturacion y la formacion intercultural vistos desde el
proceso de formacion del estudiante universitario. La propuesta le
ofrece al profesor los recursos necesarios para, desde la clase y
demas contextos de actuacion, dirigir el proceso de formacion desde
tres dimensiones fundamentales: la docente-metodologica, la
laboral- investigativa y la educativo-extensionista con la
proyeccion de acciones metodologicas que propician el desarrollo de
la formacion desde una perspectiva intercultural."
